Dr. Sushil K. Singh

I was professionally employed as a Food Engineering Technologist at the Institute of Dairy Ingredient Processing (IDIP) Pilot Plant in USA before joining NIT Rourkela as an Assistant Professor in 2018. I completed my Ph.D. in Food Process Engineering from South Dakota State University, USA in 2016 and was an R&D personnel for Vets Plus Inc., in Wisconsin, USA till early 2017. I received “Netaji Subhas-ICAR International Fellowship 2011-12” to pursue my PhD research in USA. I did my M.Tech in Food Process Engineering from IIT Kharagpur in 2011 and received DAAD Fellowship to conduct my Master's research in Karlsruhe Institute of Technology, Germany.

Food processing is a fascinating field that combines science and engineering to feed people around the globe. It involves many aspects, such as choosing the right ingredients, ensuring food quality and safety, and designing innovative products. However, what really sparks my interest is the role of technology, especially food extrusion, food nanotechnology and machine learning, in advancing the field. These technologies can create new opportunities and solutions for food processing challenges and goals. Food extrusion is a process that uses high temperature and pressure to shape and cook food materials, such as cereals, snacks, and pet food. Food nanotechnology is the application of nanoscale materials and devices to food, such as nanosensors, nanocapsules, and nanocoatings. Machine learning is a branch of artificial intelligence that uses data and algorithms to learn from patterns and make predictions and decisions. These technologies can work together to enhance food processing in various ways, such as improving efficiency, sustainability, safety, and personalization. Imagine sensors that monitor crops for optimal harvest times, AI-powered systems that optimize processing lines for efficiency and sustainability, or algorithms that create personalized food based on individual dietary needs. The possibilities are endless! Combining food processing with machine learning feels like being on the cusp of something truly transformative, and that's what gets me excited to come to work every day.
